Baked vegetable omelet

Ingredients for 2 servings:

  • 4 eggs
  • 1 bunch of spring onions
  • ½ bell pepper(s)
  • 1 handful of tomatoes, small
  • 50 g cheese, grated
  • some oregano
  • salt and pepper
  • some stock powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

vegetarian, light snack

First, fry the spring onions in a little oil, then add the chopped tomatoes and bell peppers. Let the vegetables sizzle for a few minutes. Meanwhile, briefly beat the eggs with the seasonings and cheese, preferably with a hand mixer. Add the mixture to the vegetables in the pan, mix well, and heat briefly. Immediately transfer the omelet to a baking dish and bake for about 25 minutes at 180°C (350°F) using a fan oven. Serve with a fresh yogurt dip and fresh baguette.
