Baked zucchini boats

Ingredients for 2 servings:

  • 2 small zucchini (about 200g each) OR:
  • 1 large zucchini
  • 200 g tomatoes, fresh
  • 100 g cooked ham (cut into cubes)
  • 100 g Gouda cheese (cut into cubes or grated)
  • 1 can tomato(s), chopped (425 g)
  • 3 tbsp chives, in rolls
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with ham and tomatoes

Preheat oven to 200°C. Halve the zucchini lengthwise and deseed with a teaspoon. Deseed the fresh tomatoes and dice them. Take 3 tablespoons of the chopped tomatoes and mix with the ham, cheese, tomatoes, and chives. Season the mixture with salt and pepper and spoon into the hollowed-out zucchini halves. Pour the remaining chopped tomatoes into a baking dish, place the zucchini on top, and bake in the oven on the second rack from the bottom for 20-30 minutes (depending on the size of the zucchini). Serve with rice.
