Baking: Mini Fried Egg Cakes

  • 80 g Margarine
  • 70 g Sugar
  • 1 Egg
  • 2 tbsp Milk
  • 90 g Flour
  • 0,5 tsp Baking powder

* for covering

  • 100 g Creme fraiche Cheese
  • 1 tbsp Cream
  • 1,5 tbsp Powdered sugar
  • 4 piece Canned apricots
  1. Halve the apricots and drain well.
  2. For the dough, beat the margarine and sugar until frothy, then add the egg and beat in. Stir in milk. Mix the flour and baking powder and stir in as well.
  3. Place baking paper in a mini baking tray (best to wet it beforehand) or grease the tray. Then fill in the dough.
  4. Bake in an oven preheated to 175 ° C for about 20 minutes. Then take it out and let it cool down.
  5. Mix the creme fraiche with the cream and powdered sugar.
  6. Cut the cake into 8 pieces and put a dollop of creme fraiche mixture (egg white) on each piece. Now put an apricot half (egg yolk) on each blob. Let the cream set.
