Baking: Spice Cake and Muffins
The perfect baking: spice cake and muffins recipe with a picture and simple step-by-step instructions.
- 150 g Butter
- 4 piece Eggs
- 250 g Sugar brown
- 1 pinch Salt
- 3 piece Cloves
- 1 teaspoon Sugar brown
- 1 pinch Freshly grated nutmeg
- 1 pinch Black pepper from the mill
- 1 teaspoon Ground cinnamon
- 1 teaspoon Lemon sugar
- 375 g Flour type 550
- 1 packet Baking powder
- 100 g Ground hazelnuts
- 100 g Orange peel
- 50 g Unsweetened cocoa
- 0,2 cl Rum
- 0,25 liter Milk
- Powder the cloves with a little sugar and salt in a mortar. Add pepper, nutmeg, cinnamon and lemon sugar and mix.
- Beat eggs with butter and sugar until frothy.
- Finely chop the orange peel.
- Now add the flour, ground nuts, baking powder, cocoa and the spice mixture and mix with the hand mixer.
- Pour in the milk and rum and make a heavy batter.
- Finally add the finely diced orange peel and fold in.
- Pour half of the dough into a greased and crumbled loaf pan and bake the cake at 190 degrees for about 40 minutes.
- Spread the rest of the dough on muffin molds and bake at 190 degrees for about 20 minutes.
- Take out and let cool down. Then sprinkle with powdered sugar or cover with chocolate icing.
