Salad dressing for lamb’s lettuce or arugula

Combine salt, sugar, and freshly ground pepper (test the amount; I use about 6-7 quarter turns from my mill) in a bowl. Add the balsamic vinegar and mix. Then stir in the mustard, followed by the milk, and finally the oil. Alternatively, pour everything into a screw-top container and shake. Season to taste. We use this sauce with lamb’s lettuce and arugula. Without the mustard and using olive oil instead of milk, the sauce also tastes great with carpaccio.
