Balsamic Grain Bread

- 300 g Spelled flour type 630
- 150 g Rye flour type 997
- 150 g Wheat flour type 405
- 2 tsp Salt
- 550 ml Lukewarm water
- 30 g Fresh yeast or 1.5 packs of dry yeast
- 120 g Sunflower seeds
- 3 tbsp Dark or light balsamic vinegar
- Knead all dough ingredients together. The dough is pretty runny. Pour into the greased Ultra and leave to rise for 5 – 10 minutes with the lid closed. No longer.
- In the meantime, preheat the oven to 220 ° C hot air. When the temperature is reached, bake the bread with the lid closed for 30 minutes.
- Then switch back to 200 ° C, remove the lid and bake for another 30 minutes.
- Remove from the Ultra to cool and place on a wire rack.
