Ingredients for 12 servings:
- 200 g berries
- 2 tbsp flour
- 300 g flour (type 405)
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- 2 eggs
- 90 g sugar, brown or white
- 1 packet of vanilla sugar
- 80 ml oil, neutral, or 125 g butter, soft
- 2 medium-sized bananas, ripe (185 g)
- Fat for the mold
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Preheat the oven to 180°C. Grease muffin tins or line them with paper baking cups. Wash and sort fresh berries, if desired. Pour canned fruit into a sieve and drain well. Do not thaw frozen berries. Dust the berries with the 2 tablespoons of flour. In a bowl, mix the 300g flour with the baking powder, baking soda, and cinnamon. In another bowl, lightly beat the eggs. Then add the sugar, vanilla sugar, and fat and mix well. Mash the peeled bananas with a fork, add to the egg mixture, and mix. Add the flour mixture to the egg mixture and mix briefly until the dry ingredients are moistened. Then carefully fold in the berries. Pour the batter into the muffin tin and bake for about 25-30 minutes.
