Ingredients for 1 servings:

  • 4 bananas
  • 2 eggs
  • 75 g almond flour or ground almonds
  • 75 g coconut flour or ground desiccated coconut
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 some vanilla extract
  • 50 g walnuts
  • e.g. cranberries, cashews, nuts or other seeds

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Grain-free, quick and delicious, suitable for Paleo

Mash the bananas, then add all the remaining ingredients, mix well, and pour into a springform pan or loaf pan. You can also add cranberries, cashews, nuts, or other seeds to taste. Bake at 180°C for about 30-40 minutes, depending on the desired browning and thickness of the bread. After baking, let it rest for about 30-60 minutes, then enjoy. This banana bread is especially good for breakfast.
