Ingredients for 1 servings:
- 110 ml sunflower oil or melted butter
- 110 g white sugar
- 110 g brown sugar
- 2 eggs
- 320 g banana(s), very ripe, peeled, approx. 3 pieces
- 250 g flour
- 1 tsp baking powder
- 1 tsp baking soda
- 100 g walnuts or pecans
- some oil (orange oil), a few drops

Banana bread
The easiest way to make this cake is in a blender. Preheat oven to 160°C (325°F). Grease and flour a 24cm or 26cm springform pan or a loaf pan. Beat sugar, oil, and eggs in a mixer for 1 minute. Add baking powder, baking soda, and half of the flour and beat for another 1 minute. Now add the ripe bananas, orange oil, and remaining flour and beat for 3 minutes. Stir in the very coarsely chopped (only chop 2-3 times) walnuts. Pour the batter into the baking pan and bake for about 60-70 minutes, or up to 90 minutes in the loaf pan. Cover with aluminum foil after 60 minutes if necessary. Do the skewer test and bake for longer if necessary. Tips: This cake needs to bake for this long to develop the right flavor. It will be quite dark. The bananas should definitely be very, very ripe (overripe, if you like) and definitely have brown spots on the skin. If you use cream of tartar, you’ll need two teaspoons instead of one.
