Ingredients for 4 servings:
- 3 bananas
- 2 eggs
- 2 tsp baking powder
- ½ small bottle(s) of vanilla flavoring
- 100 g oat flakes, fine
- 60 g flour
- 200 g low-fat curd cheese
- 1 shot of rapeseed oil
- 80 g raisins
- 100 g nuts (e.g. almonds, hazelnuts), coarsely chopped
- 20 g almond flakes for decoration
- 2 tsp sweetener if needed
- Fat for the mold
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 45 minutes

First, mash the ripest bananas possible. Either with a fork or a kitchen utensil. Then gradually add all the ingredients (except the flaked almonds), stirring vigorously after each addition. When everything forms a homogenous mixture, either grease a loaf pan or use a silicone loaf pan and pour in the batter. Bake in a preheated oven at 170°C (330°F). After 40 minutes, check with a fork if any batter is still sticking to it; continue baking. After 60 minutes at the latest, remove the banana bread from the oven, let it cool for at least 20 minutes, and then remove it from the pan. Tastes great with butter while it’s still a little warm. It’s also delicious afterwards with honey, or just on its own. I only add the sweetener because the kids like it sweeter. Tip: The banana bread stays nice and moist if you put it in the microwave for 10 seconds before eating and let the butter melt on top.
