Banana cake

Ingredients for 1 servings:

  • 100 ml corn germ oil
  • 4 tbsp orange juice
  • 50 ml honey
  • 150 g walnuts, chopped
  • 400 g banana(s), very ripe (already brown-spotted)
  • 1 tsp cinnamon
  • 1 pinch of cardamom
  • 250 g wheat flour, possibly wholemeal flour
  • 4 tsp cream of tartar baking powder
  • 10 dates, chopped
  • possibly grease for the mold

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

free from animal protein, very ripe bananas, wholemeal flour can be used

Combine the oil, orange juice, and honey. Puree the bananas in a blender and stir into the liquid until smooth. Combine the spices, flour, and baking powder and add. Fold in the chopped dates. Pour the batter into a 30 cm loaf pan lined with baking paper or greased. Bake at 180°C for approximately 50-60 minutes. The cake is moist, juicy, and sweet. It also tastes delicious warm. Or with cream and warm vanilla sauce.
