Banana cake with chopped nuts

Ingredients for 1 servings:

  • 110 g butter
  • 110 g brown sugar
  • 110 g sugar
  • 300 g flour
  • 1 egg(s)
  • 1 tsp baking soda
  • 1 packet of vanilla sugar
  • 3 banana(s), overripe
  • 1 bag of hazelnuts or walnuts, chopped
  • possibly chocolate flakes
  • possibly orange juice or lemon juice
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the butter in a small saucepan and melt until almost completely melted, stirring occasionally. Then add all the sugar (including the vanilla sugar) and mix well. Now add the egg and gradually add the flour and baking soda. Note: Don’t be surprised; this will result in a rather crumbly mixture, similar to the crumb topping in a crumb cake. Therefore, it’s best not to use a hand mixer here, as the crumbs will just fall apart. Then peel and mash the bananas, and mix them with the crumbles (you can also use a hand mixer). Add chopped nuts. You can also add chocolate flakes and, if the batter is too dry, orange or lemon juice. Finally, grease a 25 cm loaf pan and pour the batter into it. Bake for about 1 hour in a preheated oven at 175°C (350°F). Depending on your oven, the top of the cake may quickly become dark and crispy; in this case, simply cover with aluminum foil and continue baking.
