Banana chicken skewers

Ingredients for 2 servings:

  • 240 g chicken breast fillet(s)
  • 1 banana(s)
  • 2 spring onions
  • 1 bell pepper(s), red
  • 100 g mushrooms
  • 1 tbsp Balsamic vinegar, white
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil
  • salt and pepper

Cut 4 wooden skewers to fit the pan and then place them in warm water. Cut the chicken breast fillet into bite-sized pieces. Mix the balsamic vinegar and sugar to make a marinade, then marinate the meat for about 30 minutes. Clean the spring onions, mushrooms, and bell peppers and cut them into pieces roughly the same size as the meat. Peel the banana and slice it thickly. Thread the banana, chicken, spring onions, mushrooms, and bell pepper pieces alternately onto the skewers and season with salt and pepper. Heat the oil in a pan and sear the skewers on all sides. Serve with rice and various barbecue sauces (charge extra!). WW – 5p per serving.
