Chinese turkey stir-fry

Ingredients for 2 servings:

  • 3 turkey schnitzels
  • 250 g soy sprouts, fresh (or 1 jar)
  • 200 g mushrooms, fresh (or 1 jar)
  • ½ jar orange juice
  • ¼ jar vinegar
  • salt and pepper
  • curry powder
  • 1 pinch(s) of sugar
  • 1 cup(s) rice (e.g.: basmati rice)
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the turkey cutlets, dry them, and cut them into small cubes. Trim and slice the mushrooms. Wash the bean sprouts. Cook the rice according to the package instructions. Brown the meat in a little oil in a pan. Then add the mushrooms, bean sprouts, orange juice, and vinegar. Season with salt, pepper, sugar, and curry powder. If using fresh bean sprouts, you can cover the pan for a few minutes. This will help the sprouts soften quickly and make them easier to stir. Cook everything for about 20 minutes, stirring occasionally, until almost all the liquid has evaporated. To serve, form a nest out of the rice and arrange the meat, mushrooms, and bean sprouts in the center.
