Banana Chocolate Cake

Ingredients for 1 servings:

  • 2 egg whites
  • 2 tbsp water, cold
  • 80 g sugar
  • 2 egg yolks
  • 40 g flour
  • 40 g cornstarch
  • ½ tsp baking powder
  • 600 g cream
  • 100 g chocolate (milk)
  • 100 g dark chocolate
  • 2 packets of vanilla sugar
  • 4 bananas (4-5 depending on size)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Beat the egg whites with the cold water until stiff peaks, then add the sugar and beat until glossy. Beat in the egg yolks on the lowest speed. Sift together the flour, cornstarch, and baking powder and stir in with a whisk. Line a springform pan with baking paper and bake at 180°C for 20 minutes. Heat 200g of cream and dissolve the chocolate in it. Chill. Beat 400g of cream with the cream stiffener and vanilla sugar until stiff peaks. Place a cake ring around the base. Halve the bananas, spread them on the sponge base, spread half of the chocolate cream over them, then add the stiffly whipped cream (reserve a little for the edge), and finally add the second half of the chocolate cream. Remove the cake ring and spread the cream over the edge.
