Ingredients for 1 servings:
- 115 g butter
- 120 g sugar, white
- 30 g brown sugar
- 2 m.-sized eggs
- 3 drops of flavoring (vanilla flavoring)
- 1 pinch of cinnamon
- 190 g flour
- 6 g baking powder
- 1 tsp. baking soda
- 120 g mascarpone or sour cream or quark 20%
- 60 g nuts (walnuts or almonds), chopped
- 2 m.-large banana(s), ripe
- 12 sweets (e.g. chocolate bonbons)
- Dark chocolate coating
- Fat for the mold
- Flour for the mold
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
not too banana-like
Preheat the oven to 175°C (top/bottom heat). Grease and flour a loaf pan. Melt the butter and let it cool slightly. Mash the bananas and finely chop the chocolate pieces. Mix the butter with both types of sugar. Stir in the eggs, vanilla extract, and cinnamon. Mix the flour with the baking powder and baking soda, add to the mixture, and stir until well combined. Finally, stir in the mascarpone, chopped nuts, banana puree, and chocolate pieces until well combined. Don’t overcook, or the cake will become sticky! Pour the batter into the pan and smooth it down. Bake for about 60 minutes. Let it cool completely in the pan, then turn out and cover with the melted chocolate coating.
