Banana Curry

Spread the love

Ingredients for 4 servings:

  • 1 turkey breast fillet(s), depending on size possibly 2
  • 3 banana(s), ripe
  • 1 jar plum sauce (Asian shop)
  • curry
  • salt and pepper
  • chili powder
  • Paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

fried turkey breast strips in a banana curry sauce

Cut the turkey breast into strips and season with salt, pepper, paprika, and curry powder, then fry. Add 3/4 to 1 full jar of the plum sauce. Thin with a little water if needed. Cut two of the ripe bananas (they should already be slightly brown) into pieces and add them to the pot. They will slowly melt during cooking, thickening the sauce a bit. Add a good 4 tablespoons of curry. Season with salt, pepper, more curry powder, and chili (for a bit of Asian spice) if desired. Simmer for about 20 minutes over medium heat. Finally, slice the remaining banana and simmer for about 5 minutes; it shouldn’t completely melt. Serve with rice. This recipe is ideal for using up overripe bananas; the riper the bananas, the better and faster the recipe will be.
