Ingredients for 1 servings:

  • 200 g butter
  • 175 g sugar
  • 4 eggs
  • some rum flavor, some dashes of
  • 1 pinch of salt
  • 125 g flour
  • 125 g cornstarch
  • 1 tsp baking powder
  • 2 tbsp cocoa powder

Melt 200g of butter in a saucepan, let it cool slightly, and then beat it with the sugar until fluffy. Then add the eggs one at a time (beat for about 1.5 minutes per egg). Add a few dashes of rum flavoring and a pinch of salt. Stir briefly, then combine the flour, cornstarch, cocoa powder, and baking powder. Add a tablespoon at a time and stir. Fill each baking cup (either a muffin tin or paper baking cups) with 1 tablespoon of batter. Bake in a preheated oven at 200°C (top/bottom heat: 180°C) for about 10-13 minutes. Then let it cool and dust with powdered sugar. This is a simple recipe with a big impact – you get fluffy muffins that taste great and are sure to garner compliments.
