Banana dessert with brittle

Ingredients for 4 servings:

  • 1 kg banana(s), ripe
  • ½ tsp cardamom, ground
  • ½ tsp vanilla, ground
  • 1 tsp lemon juice
  • 250 ml cream
  • 3 tbsp maple syrup
  • 50 g almond(s), chopped

Puree the ripe bananas (the riper the better) in a blender with vanilla, cardamom, and lemon juice. Sweeten to taste if desired, but this is usually unnecessary with perfectly ripe bananas. Transfer the banana mixture to bowls. Whisk the cream until stiff peaks form, adding 2 tablespoons of maple syrup. Pour over the banana cream. Toast the chopped almonds in a dry pan until evenly browned, stirring continuously. Finally, add the remaining maple syrup and continue stirring for a few more minutes over medium heat. Then let it cool, while the remaining moisture dries out. Once cooled, you can easily crumble everything into brittle. Sprinkle these over the cream just before serving.
