Ingredients for 1 servings:

  • 3 banana(s), ripe, peeled, mashed with a fork
  • 1 tsp cinnamon powder
  • 2 m.-sized eggs
  • 100 g wholemeal spelt flour
  • 1 tsp baking powder with saffron
  • 40 g oat flakes
  • 50 g walnuts, chopped
  • 25 g cranberries, dried, chopped small
  • 70 ml milk (3.5% fat)
  • Butter for the mold

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Add the cinnamon to the bananas. Beat the eggs until frothy. Combine the flour and baking powder and add them to the banana mixture along with the eggs, oats, walnuts, and cranberries. Mix gently with a hand mixer, then gradually add enough milk (or more if necessary) until a thick batter forms. Spread the batter into a greased donut pan and bake in a preheated oven on the middle rack at 180°C for about 25-30 minutes until golden brown.
