Ingredients for 1 servings:
- 1 cup sugar, possibly brown
- 125 g butter
- 2 eggs
- 2 bananas, ripe (the skin may already be black)
- 2 cups flour
- 1 tsp baking powder
- ½ cup nuts of your choice (e.g. walnuts or pecans), chopped
- 1 pinch of salt

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Banana Bread
Preheat the oven to 190°C. Mix all ingredients in the order listed. Chop the bananas slightly before adding them; the blender does the rest. Bake for 20-30 minutes in a square pan or about 45 minutes in a loaf pan. This cake makes a great snack to take with you on a hike or bike ride. It can also be frozen in portions, so you’ll always have an energy boost ready for your next trip.
