Banana Bread – Mississippi Style

Ingredients for 1 servings:

  • 1 cup sugar, possibly brown
  • 125 g butter
  • 2 eggs
  • 2 bananas, ripe (the skin may already be black)
  • 2 cups flour
  • 1 tsp baking powder
  • ½ cup nuts of your choice (e.g. walnuts or pecans), chopped
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Banana Bread

Preheat the oven to 190°C. Mix all ingredients in the order listed. Chop the bananas slightly before adding them; the blender does the rest. Bake for 20-30 minutes in a square pan or about 45 minutes in a loaf pan. This cake makes a great snack to take with you on a hike or bike ride. It can also be frozen in portions, so you’ll always have an energy boost ready for your next trip.
