Banana Forest

Ingredients for 4 servings:

  • 2 bananas
  • 2 tsp cane sugar or brown sugar
  • 4 tsp honey
  • 4 tsp walnuts
  • 1 shot of cognac or brandy
  • 4 tsp butter
  • Ice cream (vanilla), as desired

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Banana – Honey – Walnut – Dessert

Caramelize the cane sugar, reduce the heat, and add the honey. While the honey is melting, add the butter to the pan. Stir well; a light foam will form. Add the chopped walnuts and toast briefly. Quarter the bananas and toss them in the resulting syrup for about 1 minute; they will take on a beautiful golden yellow color. Remove the bananas from the pan, increase the heat briefly, and deglaze the mixture with brandy or, even better, cognac. Allow to thicken slightly. In the meantime, portion out the vanilla ice cream, add the bananas, and pour the thickened syrup over them. This recipe comes from an American friend from Florida who uses considerably more butter and honey. It tastes even better that way! P.S. If you don’t have walnuts on hand, chopped peanuts will do.
