Blueberry Pancakes

Ingredients for 3 servings:

  • 1 large egg(s), separated
  • 3 egg whites
  • 250 g yogurt (skimmed milk yogurt)
  • 50 ml milk
  • 75 g applesauce
  • 75 g sugar or fructose (use less)
  • 2 tsp baking soda
  • 175 g flour
  • Blueberries, fresh or frozen
  • 1 pinch of salt
  • 1 pinch(s) of vanilla sugar
  • little oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine egg yolks with yogurt, milk, sugar, salt, applesauce, and vanilla sugar. Add the flour and baking powder and stir until smooth. Beat the egg whites until stiff and fold into the batter. Cook the pancakes in a nonstick frying pan (wipe with only a very small amount of oil). Pour in some batter, sprinkle with blueberries, and turn only once. Makes 24 pancakes.
