Banana mascarpone cream with rum raisins and tonka bean

Ingredients for 4 servings:

  • 2 bananas
  • 250 g mascarpone
  • 250 g Greek yogurt
  • 5 tbsp honey or sugar
  • 100 ml brown rum
  • 3 tbsp raisins
  • some tonka bean(s), finely grated
  • Chocolate sprinkles or other decoration

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes

Quick to make and very tasty

First, soak the raisins in the rum and let them steep for about 10 minutes, or longer if you like. Mix the mascarpone with the yogurt and honey, ideally using a hand mixer. Mash the bananas well with a fork and add them to the cream. Drain the soaked raisins, collect the rum, and add the raisins to the cream as well. Grate a little of the tonka bean over the cream, ideally using a fine nutmeg grater or similar. Mix well. Mix everything together by hand. Season to taste and add a little more of the leftover rum if desired. If you prefer it a little sweeter, you can also stir in 2-3 tablespoons of sugar. Garnish with chocolate shavings or something similar and serve. Quick to prepare, simple, delicious, and also great for using up very ripe bananas.
