Banana muffins made from Hermann dough

Ingredients for 16 servings:

  • 400 g flour
  • 2 tsp baking powder
  • 150 g butter
  • 100 g sugar
  • 4 eggs
  • 1 tbsp vanilla essence
  • 2 bananas, ripe
  • 200 ml dough (Hermann dough)
  • some chocolate decorations (chocolate drops)
  • 100 g jam or Nutella for filling
  • possibly water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

light, quick, juicy and really delicious!

Cream the butter, sugar, and eggs until fluffy. Combine the flour and baking powder and add a spoonful at a time. Add the vanilla essence and bananas to the batter and beat until smooth. Add a little water if the batter is too stiff. Add the Hermann batter and stir briefly. Fill into muffin cups (greased or lined with paper baking cups), decorate with chocolate drops, and bake at 160°C (convection oven) for about 20 minutes. Let cool, cut open crosswise, fill with jam (strawberry or mango jam is particularly delicious) or Nutella, and put back together. These muffins are especially delicious because they are wonderfully moist.
