Banana oat muffins

Ingredients for 1 servings:

  • 2 bananas, very ripe
  • 2 m.-sized eggs
  • 4 tbsp, heaped wholemeal flour or spelt flour
  • 2 tbsp, heaped oat flour
  • 2 tbsp, heaped oat flakes
  • 1 tbsp cocoa
  • 3 tbsp, heaped almonds, ground
  • 1 tbsp, heaped sugar
  • 1 packet of vanilla sugar
  • ½ pack of baking powder
  • 1 pinch of cinnamon

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

quick, easy use of leftover ripe bananas, makes 6 servings

Preheat the oven to 180°C (fan/convection oven). Mix all ingredients in a bowl, then pour the batter into muffin cups and bake in the preheated oven for about 20 minutes. The muffins will be cooked through and the bananas will still be nice and moist. This recipe makes about six muffins. Tip: If you like, you can dust the muffins with powdered sugar or chocolate glaze.
