Ingredients for 3 servings:
- 200 g flour
- 2 tsp baking powder
- 2 eggs
- 2 tbsp sugar
- 1 pinch of salt
- 1 pinch of cinnamon powder
- 5 bananas, medium ripe
- 200 g sour cream
- 6 tbsp sweet cream
- possibly oil or butter for frying
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
with banana in the dough and banana slices on top
Mix the flour with the baking powder. Beat the eggs with 2 tablespoons of sugar, a pinch of salt, and the cinnamon until frothy. Peel 2 bananas and mash them into a puree. Mix them with the egg, sour cream, and sweet cream. Fold in the flour and set the batter aside (it can rest for a few minutes). Peel and slice 3 bananas. Heat a pan, add 1 ladleful of batter, and place some banana slices on top. As soon as air bubbles appear in the batter and the underside is brown, turn them over and cook briefly until done. Be careful not to burn the bananas – so don’t turn them over too early! If you like, you can also fry the pancakes in oil or butter, although a non-stick pan works well without. Cinnamon sugar, maple syrup, chocolate sauce, and more go well with them. This amount of batter makes about 10 pancakes.
