Banana Pecan Muffins

Ingredients for 12 servings:

  • 225 g flour
  • 2 tsp baking powder
  • 80 g butter, soft
  • 225 g sugar
  • 2 eggs
  • 2 tsp butter-vanilla flavoring
  • 4 banana(s), ripe, mashed
  • 80 g nuts (pecans), chopped
  • 8 tbsp milk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 175°C and grease a muffin tin thoroughly or line it with paper baking cups. Combine flour and baking powder. Cream together butter and sugar. Stir in eggs and flavoring, then fold in the mashed bananas and pecans. Gradually stir in the flour mixture and milk. Pour the batter into the muffin tins and bake in the oven for about 25 minutes.
