Broccoli and cheese soup with minced meat and mushrooms

Ingredients for 6 servings:

  • 500 g minced meat, mixed
  • 500 g broccoli (easiest frozen)
  • 500 g mushrooms, fresh or from the can
  • 2 onions
  • 1 liter vegetable broth, instant
  • 2 cups of cream
  • 2 tsp flour, for binding
  • 1 package of processed cheese (herbs)
  • salt and pepper

Chop the onions and fry them with the ground beef until crumbly. Add the cleaned and sliced ​​mushrooms and the cleaned broccoli. It’s not necessary to chop the broccoli, as it will fall apart simply by cooking. Pour in the vegetable broth and 1 1/2 to 2 cups of cream and simmer for about 10 minutes. Melt the cheese in the hot soup. Stir the flour into the remaining cream to thicken the soup. Season with salt and pepper. You can also sprinkle the soup with mixed pepper on the plate. Serve with baguette, flatbread, or white bread.
