First, the banana is pureed and the tamarind pulp is removed from the pod. This is then blended into the banana mixture. The egg is separated and the egg white is beaten with the sugar. Half of the egg white is then folded into the banana puree. The other half is heaped onto a piece of aluminum foil and briefly browned on top in the oven at 250°C (480°F) for 2-3 minutes. The lightly browned meringue is then placed on top of the prepared banana-tamarind mousse.
