Banana – Turkey – Curry

Ingredients for 3 servings:

  • 1 can of pineapple
  • 2 onions
  • 500 g turkey breast fillet(s)
  • 3 tbsp oil
  • 2 tbsp curry
  • 125 ml pineapple juice (can)
  • 125 ml chicken broth
  • Salt
  • 2 bananas
  • pepper
  • Sugar
  • 2 tbsp sauce thickener, light
  • 200 g rice (long grain rice)
  • 150 g crème fraîche

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Drain the pineapple slices, reserving the juice. Peel and dice the onions. Cut the turkey breast into strips and fry in hot fat. Add the onions and let them translucent. Sprinkle with curry, add the pineapple juice and stock, and cook over low heat for 5 minutes. Meanwhile, cook the rice. Peel and slice the bananas. Slice the pineapple rings. Add the pineapple and crème fraîche to the pot and heat until hot. Season with salt, pepper, and a pinch of sugar. Sprinkle in the sauce thickener and bring to a boil. Finally, add the banana slices and serve with the rice.
