Banana-Walnut Muffins

Ingredients for 12 servings:

  • 5 banana(s), ripe
  • 200 g butter, soft
  • 200 g powdered sugar
  • 200 g flour
  • 2 tsp baking powder
  • 4 eggs
  • 100 g dark chocolate
  • 80 g walnuts, any other nuts will do
  • 3 tbsp lemon juice
  • 1 pinch of salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Preheat the oven to 170°C (top/bottom heat). Roughly chop the chocolate. Peel and dice the bananas, and mix with the lemon juice. Beat the softened butter, powdered sugar, and salt with the whisk attachment of a hand mixer for 8 minutes until very creamy. Beat in the eggs, one at a time. Combine the flour and baking powder, then mix with the nuts and chopped chocolate. Then mix with the egg mixture. Finally, fold in the diced bananas. Fill everything into muffin cups and bake in the preheated oven for about 25-30 minutes.
