Basic fruit ice cream recipe

Ingredients for 8 servings:

  • 400 ml milk
  • 100 ml cream, sweet
  • 70 g sugar
  • 70 g glucose
  • 10 g vanilla sugar, homemade
  • 250 g fruit, prepared and weighed

Instructions

Working time approx. 10 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 40 minutes; Total time approx. 4 hours 50 minutes

Roughly chop the prepared fruit. Combine it with the other ingredients in a tall container and blend using an immersion blender. Transfer it to the ice cream maker and freeze for about 40 minutes. Freeze for several hours in the freezer. The amount of sugar can be increased according to individual taste and the type and ripeness of the fruit. The ice cream mixture should taste significantly sweeter before freezing. However, it should not contain less than 150 g of sugar.
