Basic Recipe, Side Dish: Spaetzle with Thermomix

  • 500 g Spelled flour type 603
  • 1 tsp Salt
  • 5 Pc. Eggs
  • 200 g Water
  1. You can also replace half of the flour with wholemeal spelled flour. For a nuttier variant, replace approx. 100 g of the flour with buckwheat flour. If you like, you can stir chopped herbs into the spaetzle dough.
  2. Simply put the ingredients all together in the mixing bowl and knead on the kneading stage for 5 minutes. The dough should throw small bubbles and be tough. It is best not to let it stand too long, but process it straight away.
  3. Boil the water or vegetable stock in a large pot and scrape in the spaetzle or press in with the spaetzle slicer. After a short time, the spaetzle swim on the surface of the water. Skim off and put in a bowl.
  4. Either serve the spaetzle as a side dish or toss it in a pan in slightly heated butter. Delicious too, of course: Käsespätzle :-)) Of course, you can also prepare the dough without a Thermomix!
