Basic sauce for many other sauces

Ingredients for 4 servings:

  • 1 tbsp butter
  • 1 tbsp flour
  • 125 ml milk
  • Salt and pepper, white

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Melt the butter in a saucepan over medium heat, add the flour, and whisk until lightly browned, stirring continuously. Add the measured, cold milk, a little at a time, whisking well until well blended, then stir in all the milk, bring to a boil, and season. This basic sauce can be varied in many ways: HERB SAUCE: Mix in chopped herbs, parsley, chives, dill, etc. A squeeze of lemon juice adds a special touch. CHEESE SAUCE: Stir in 1 tablespoon of grated spicy cheese or processed cheese. CURRY SAUCE: Half of the milk in the basic sauce can be replaced with coconut milk, but it’s not necessary. Mix in 1 tablespoon of curry powder and a little applesauce, perhaps a little more cream. MUSTARD SAUCE: Stir in 1 tablespoon of mustard and 1 tablespoon of butter. If you want the sauce to be a little creamier, you can add cream, crème fraîche or more butter, or use an egg yolk to thicken it.
