Ingredients for 1 servings:
- 2 bunches of basil
- 150 g cashew nuts, salted
- 75 g pine nuts
- 200 g Parmesan
- 5 garlic cloves
- 220 ml olive oil
- salt and pepper
- Sugar
Instructions
Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes
Coarsely grate the Parmesan and blend it in a food processor with roughly chopped basil, cashews, pine nuts, garlic, and olive oil. Season the pesto with salt, pepper, and sugar. Let it sit for at least 3 hours before serving. I serve the pesto with spaghetti and garnish it with more freshly grated Parmesan.
