Bavarian burger “Star of the South” from Fiefhusen

Ingredients for 1 servings:

  • 1 hamburger bun (brioche burger bun)
  • 1 tsp, heaped sour cream
  • 1 handful of parsley, flat, coarsely chopped
  • 1 tsp, heaped coleslaw, drained
  • 75 g Leberkäse, cut into strips
  • ½ m.-sized onion(s), cut into half rings
  • 1 tbsp rapeseed oil
  • 1 white sausage, freshly brewed, cut into strips
  • 1 shot of wheat beer
  • 50 g mountain cheese, cut into strips
  • 2 slice(s) pickled gherkins (sandwich gherkins)
  • 1 tbsp, heaped mustard, sweet

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Heat the brioche burger bun in the oven at approximately 80°C (top/bottom heat) until warm and slightly crispy. Heat the rapeseed oil in a non-stick pan to three-quarters heat and brown the Leberkäse strips and onions until a little sediment forms. Deglaze with a good splash of wheat beer, toss to combine, and set aside. Meanwhile, add the Weißwurst (white sausage) to simmering water (do not let it boil) for about 10 minutes. Then peel and cut into strips. Briefly drain the coleslaw and the pickle slices in a sieve. Cut the Bergkäse (alpine cheese) into strips. Now everything is ready to assemble. First, spread the sour cream evenly over the bottom of the bun. Then add the coleslaw and spread it evenly. Add the parsley, Leberkäse strips with onions, Bergkäse (alpine cheese), Weißwurst (white sausage), and pickle slices. Spread sweet mustard on the top of the bun and put the lid on. This order isn’t a religious one, but it has proven to be a good edible ingredient. The idea for the burger came very late, so I “only” bought it at the supermarket. But that didn’t detract from the taste. If they had radishes there, I would have included them too. I’ll add them next time. For the Champions League final between Bayern Munich and PSG, I wanted to serve something quick and Bayern-related alongside the wheat beer. That’s why I came up with the “Star of the South.” Everyone liked it almost better than Bayern’s win and the wheat beer.
