Ingredients for 4 servings:
- 400 g carrot(s), peeled (yellow beets)
- 4 tbsp water
- 1 pinch(s) of sugar
- herbal salt
- 4 tbsp Balsamic vinegar Bianco
- ⅛ liter vegetable broth
- 2 tbsp olive oil
- chives
- Parsley
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 47 minutes
for the microwave
Slice the yellow beets into thin slices (this works best with a cucumber slicer). Place them in a glass dish with a lid along with the water and microwave at 900 watts for about 7 minutes. Then drain the water. Make a dressing with sugar, herb salt, broth, balsamic vinegar, and olive oil. Pour this over the yellow beets. Mix well and let it marinate for half an hour. Sprinkle with the chopped herbs and serve! If you like, you can also add half a diced onion to the dressing!
