Ingredients for 90 servings:

  • 240 g tomato ketchup
  • 300 g brown sugar (cane sugar)
  • 150 g onion(s), chopped
  • 90 g vinegar (white wine vinegar)
  • 20 g salt
  • 25 g garlic – pepper or steak pepper (crushed)
  • 8 g Worcestershire sauce
  • 20 g mustard seeds (crushed)

Instructions

Working time approx. 5 minutes; Rest period approx. 1 day; Total time approx. 1 day 5 minutes

Probably the best dip for grilling, as well as for spare ribs and chicken wings

Combine all ingredients (except the brown sugar) in a saucepan and SLOWLY bring to a boil, stirring constantly (careful! Don’t let it burn). Continue to cook until all the onions are completely cooked. Then add the brown sugar a little at a time and let it melt. Bring back to a boil briefly, then let it cool, preferably in a cold water bath or later in the refrigerator, to achieve the optimal consistency. Done!
