BBQ Whiskey Smoke Barbecue Sauce

Ingredients for 4 servings:

  • 70 ml olive oil
  • 125 ml vegetable stock
  • 1 small onion(s), diced
  • 2 cloves garlic
  • 3 tbsp tomato ketchup
  • 1 tbsp sauce (teriyaki or soy sauce)
  • 1 tbsp honey
  • 3 pinches smoked salt
  • 3 pinches of pepper
  • 40 ml whiskey
  • e.g. chili

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 15 minutes

strong barbecue sauce (also ideal for marinating)

Heat the oil and sauté the onion. Press in the garlic and immediately deglaze with the stock (don’t let the garlic burn!). Add the ketchup and season generously with smoked salt, pepper, and chili. Add honey and teriyaki sauce for a sweet touch. Reduce the sauce to the desired consistency. The sauce also makes an excellent base for marinating beef fillet. The quantities are guidelines only and can be adjusted to suit your taste.
