Ingredients for 4 servings:

  • 1 jar beans, green or yellow
  • 1 small onion(s)
  • 1 cup water
  • ¼ cup vinegar
  • 2 tbsp sugar
  • 1 pinch(s) of pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Drain the beans well, then place them in a bowl and season well with pepper. Chop the onion into very small pieces and add to the beans. Pour the water into a small saucepan, add the vinegar and sugar. Bring to a boil and simmer for about 1 minute. Taste again to see if you need more vinegar or sugar; it should taste really sweet and sour. Remove the pan from the heat and pour the contents directly over the beans. The digestible thing about this: the vinegar is no longer as acidic after cooking, and the hot liquid makes the onions more digestible. Let the bean salad cool. It can also be prepared a day in advance; then it will naturally be very well marinated.
