Bean Stew
The perfect bean stew recipe with a picture and simple step-by-step instructions.
- 1 packet Beans white
- 1 large 250g Cabanossi
- 500 g Potatoes
- 1 bunch Root and tuber vegetables
- 1 tbsp Herbs of Provence
- 0,5 liter Vegetable broth
- 2 medium sized Zucchini
- 1 Red Paprika
- 1 yellow Paprika
- 1 size Onion
- 2 toes Fresh garlic
- 2 toes Salt and pepper
- 2 Cans Pizza tomatoes
- Wash the vegetables and cut everything into small pieces. Our roots consist of celery, carrots, parsley and leeks. It is always in a bunch. Usually there are always 4-5 carrots with us. That is cheaper than buying everything individually. What I have completely forgotten, I have the white beans soaked overnight.
- The Cabanossi, cut into slices, in a large pot. So with us a large top (grin). Please sauté it. Please add the garlic and onion. But be careful not to brown the garlic.
- Then you add all the vegetables and turn the temperature down. The vegetables should only be sautéed a little. You can add all the vegetables at once, including the potatoes.
- Then the vegetable stock is used, followed by the pizza tomatoes. Now let everything simmer a little, the vegetables should still be firm to the bite.
- When all of this is done, season as you would like.
- At the end you add the beans. We like a lot of beans. The stew was really delicious and served with homemade flatbread
