Beef broth with broccoli

Ingredients for 4 servings:

  • 500 g beef (beef brisket)
  • 2 liters of beef broth
  • 3 bay leaves
  • 1 tbsp peppercorns
  • 250 g broccoli
  • 200 g rice, cooked
  • Salt
  • pepper
  • Parsley, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the beef brisket in beef broth with bay leaves and peppercorns for 2.5 hours. Divide the broccoli into florets. Cook the rice. Pour in the broth and cook the broccoli florets for 10 minutes. Dice the meat, add it to the soup with the rice, season with salt and pepper, and sprinkle with parsley. I serve it with toasted baguette.
