Crunched Apple & Curd Strudel with Elderberry Rice
The perfect crunched apple & curd strudel with elderberry rice recipe with a picture and simple step-by-step instructions.
Apple strudel:
- 125 g Flour
- 2 tbsp Sunflower oil
- 125 ml Water
- 600 g Apples
- 2 tbsp Lime juice
- 50 g Cinnamon sugar
- 20 g Sultanas
- Butter cream
- Powdered sugar
Curd strudel:
- 125 g Flour
- 2 tbsp Sunflower oil
- 125 ml Water
- 250 g Quark
- 125 g Sugar
- 2 tbsp Lime juice
- 2 Pc. Eggs
- 2 tbsp Semolina
- 70 g Sultanas
- 0,5 packet Custard powder
- Butter cream
- Powdered sugar
Crunch:
- 150 g Chopped almonds
- 50 g Sugar
- Butter cream
Elderberry rice:
- 300 g Yogurt
- 150 g Cream
- 100 ml Elderberry syrup
- 1 tsp Lime juice
- Peel, core and quarter the apples and mix with the lime juice, cinnamon sugar and sultanas. Now simmer on medium heat for about 15 minutes. Then let it steep for about 4 hours.
- Knead the flour, water and sunflower oil into a dough until it is supple. Shape into two balls, brush with a little oil and put in the refrigerator for about ½ hour.
- Roll out the dough on a floured work surface and then pull it out with the back of your hand until you can see through. Now the dough can be coated with buttercream and the apple filling can be spread over it. Now carefully roll up and place on the baking sheet. Then brush the strudel with buttercream.
- For the quark measures, stir the quark, eggs, sugar, vanilla pudding powder, lime juice, semolina with a hand mixer. Finally add the sultanas.
- Prepare the second ball of dough again in the same way and distribute the curd size on it. Carefully roll up again and place on the baking sheet. Brush the strudel with buttercream. Bake both strudel in the fan oven for 40 minutes at 180 ° and then let them cool down.
- For the crunch, heat buttercream over medium heat and toast the almonds in the form of sticks or chopped form. Let the sugar trickle in. Be careful not to burn the sugar. When the almonds have reached the desired crunch, let them cool down.
- Mix the Greek yogurt with elderberry syrup and lime juice in a bowl. Whip the cream until stiff and then fold in. Now the measurements can be prepared in the closed container either in the freezer for approx. 3 hours or with the help of an ice machine.
- When serving, the plate can be decorated with fresh fruits. Reheat the strudel in the oven for 10 minutes and then cut it open and put it on the plate. Let the almond crunch and powdered sugar trickle over the strudel. Now a scoop of ice can be added.
