Beef fillet toasties

Ingredients for 2 servings:

  • 200 g beef fillet(s)
  • 2 tsp rapeseed oil
  • 1 onion(s), cut into rings
  • 2 apples, cut into small pieces
  • 1 tsp marjoram
  • 4 tbsp orange juice
  • 2 tsp mustard
  • 2 tsp honey
  • 2 rolls (wholemeal rolls)
  • 4 tbsp low-fat curd cheese
  • some herbal salt
  • 2 handfuls of arugula, roughly chopped
  • some salt and pepper

Season the beef fillets with salt and pepper and sear on both sides in rapeseed oil for about 2 minutes. Remove from the pan and wrap in aluminum foil. Mix the orange juice with the mustard and honey. Peel the onion and slice into rings. Wash the apples and cut into small pieces. Toss them together in the pan juices with the marjoram for 1-2 minutes, then season with salt and pepper. Halve the rolls, spread quark on each half, and sprinkle with herb salt. Cut the beef fillet into 1 cm thick strips and arrange the apples, onion, and arugula on the roll halves. Drizzle with a little orange dressing, drizzle with the pan juices, and serve.
