Beef Rolls with Feta and Olive Filling

The perfect beef rolls with feta and olive filling recipe with a picture and simple step-by-step instructions.

  • 250 g Feta
  • 150 g Black pitted olives
  • 6 tbsp Tomato paste
  • 0,5 bunch Parsley crispy fresh
  • 4 Discs Beef Roulade
  • Salt and pepper
  • 1 tbsp Oil
  • 250 ml Dry red wine
  • 250 ml Beef broth
  1. Mash the cheese with a fork. Drain the olives and cut into slices. Mix both with the tomato paste and parsley.
  2. Wash and dry the beef roulades and season with salt and pepper.
  3. Brush with the feta and olive mixture, roll up and fix with wooden skewers.
  4. Heat the oil in a pan and fry the beef rolls in it on all sides for about 10 minutes.
  5. Pour the red wine and the beef stock, bring to the boil, cover and simmer for about 30 minutes. Season with salt and pepper.
  6. Arrange the beef rolls with the sauce on plates. Serve with a herb and butter baguette.
