Beef Roulades with Serrano Ham

- 4 Beef roulades
- 4 tsp Lion mustard
- Salt
- Pepper from the grinder
- 1 Leek
- 0,5 Red onion, diced
- 8 Serrano ham slices
- 4 Gherkins
- 2 tbsp Rapeseed oil
- 2 tbsp Tomato paste
- 1 Carrot
- Celery
- 1 Bay leaf
- Flour
- Brush the meat with mustard, season. Top with Serrano ham, leek rings, onion cubes and cucumber. Roll up, get stuck.
- Sear the roulades in oil on all sides.
- Add the carrot and celery pieces and the remaining leek, toast briefly. Stir in tomato paste, also briefly toast.
- Pour in the water, add the bay leaf and simmer for 1 ½ to 2 hours. Strain the sauce and thicken with a little flour
