Ingredients for 6 servings:
- 300 g beef (leftover roast beef)
- 4 gherkins
- 2 tomatoes
- 1 red bell pepper(s)
- 2 spring onions
- salt and pepper
- Balsamic vinegar
- Onion(s) (pearl onions)
- Sugar
- oil

Use a bread slicer or sausage slicer to thinly slice the leftover roast beef, then cut these into thin strips. Cut the gherkins into thin strips as well. Remove any excess fat from the tomato and cut it into thin strips. Halve the peppers, remove the seeds, cut each half in half again, and cut it into thin strips. Trim the spring onions and slice the green parts into thin rings. In a bowl, make a sauce with salt, pepper, a little sugar, the balsamic vinegar, and the oil. Mix all the ingredients together with the sauce. Season to taste. If you like, you can add 1-2 tablespoons of small pearl onions. Tastes great with fried potatoes, but also with bread. A sensible way to use up leftovers.
