Ingredients for 4 servings:

  • 200 g sausage (Rhenish ham sausage)
  • 100 g gherkins
  • 160 g mayonnaise
  • 50 ml cucumber juice
  • 1 tsp mustard
  • pepper
  • some sugar

Salad of ham sausage and gherkins

Cut the ham sausage into 1-2 mm thick slices, then into strips approximately 3-4 mm wide and 15 mm long. Cut the cucumbers into equal-sized pieces, but each 3-4 mm long. Place the cucumber pieces in a bowl with the mayonnaise and sausage. Add the cucumber juice and plenty of freshly ground pepper, a little sugar, and mustard, and season to taste. Salt is usually not necessary, as all ingredients are already seasoned. This salad can be served as a spread on bread or as part of a Russian salad.
