Beef sauce

Ingredients for 4 servings:

  • 750 g beef (prime rib)
  • 1 onion(s)
  • 1 bunch of soup vegetables (leek, carrot, celery)
  • 100 g bacon, streaky, smoked
  • 6 garlic cloves
  • 1 sprig of basil
  • 1 can of tomatoes, peeled
  • olive oil
  • butter
  • Salt
  • peppercorns

Working time approx. 40 minutes; Total time approx. 40 minutes

Inspired by Ragù bolognese, but not original

Cut the beef into 1/2 to 1 cm cubes and fry in olive oil in batches until browned. Keep warm. Clean the vegetables and cut into very fine cubes. Finely chop the onion and finely dice the bacon. Chop the garlic cloves and roughly crush the peppercorns. Melt the butter in olive oil and brown the vegetables, onion, and bacon. Add the meat, tomatoes, salt, pepper, and half the garlic and bring to a boil. Simmer over low heat for two hours. In the meantime, strip and chop the basil leaves. Finally, stir in the remaining garlic and basil, season with salt, and serve the sauce with your choice of pasta.
